While chasing the carjacker that killed his uncle, Peter Parker chases him in his wrestling outfit. However in some videos, Peter wears his final Spider-Man already.

DELETED SCENE - Stan Lee cameo – Selling sunglasses
Stan Lee is selling sunglasses and looks up and says: "These are the same glasses that the X-Men wore.” Two kids say: “Awesome.” Also Stan Lee was meant to have a bigger cameo, as we may believe the Audio Commentary.

DELETED SCENE - Sssst
After saving the two people with his spiderwebs, Peter Parks puts his finger to his mouth and signals them (or witnesses) to be silent. They probably realized he is Spider-Man.

DELETED SCENE - Spider-Man vs Goblin fight
A longer fight on the ground between Spider-Man and the Goblin (pic1). This first pic looks like a rehearsel shot. While the Goblin scares away some people and does some weird dancing (pic2-4), Spider-Man makes some salto's (pic5-6) and lands, jumps over a table a arrives in front of the Goblin. They probably do some hand fighting before the scene continues to the scene in the movie.

DELETED SCENE - Harry Osborn tries to save MJ
Seems Harry was not such a coward after all! After Harry is knocked against a wall (pic1) by the explosion or some fire, he stands up and tries to rescue his date MJ, who lies on the falling balcony (pic2-5). Harry reaches out to her, but a huge fireball prevents him from reaching her (pic6-8). He can only watch her fall (pic9-10).

DELETED SCENE - Harry wants Spider-Man dead
At Peter's birthday party at Aunt May's home, Harry tells Peter he wants Spider-Man dead. In the trailer Harry says "I want Spider-Man dead." In the TV spots Harry says "I want this guy dead." I believe the last version of that line ("this guy") was filmed.

DELETED SCENE - Backyard romance
The scene in the back yard between Peter Parker and MJ where they have a sort of romantic interchange was originally longer. It was shortened for pacing reasons.

DELETED SCENE - Spider-Man vs. Doc Ock fight
First some guessing. I suspect that this part happens when Doc Ock and Spider-Man are fighting while Aunt May hangs with her umbrella at the statue (before she even realizes that she will not fall down). They both somehow end up inside a building by crashing through the window while some woman just stands in the corner, and is frightened by the two fighting men. Spider-Man sits on top of Doc Ock and hits him in the face twice (pic1). He then looks up (pic2) and looks over his shoulder (pic3), probably distracted by something outside (Aunt May screaming for help as she can’t hold on to her umbrella anymore?). Doc Ock takes his chance and pulls Spider-Man with his tentacles against the ceiling (pic4). He then smashes Spider-Man against the right wall (pic5), followed by smashing Spider-Man into the left wall (pic6). Spider-Man struggles to free himself from Ock’s arms. What then happens is unknown to me, but somehow they both end up outside again. As you can see in the pics you have to imagine Doc Ock’s tentacles, since this is a behind-the-scenes shot without the special effects (arms) already added.

DELETED SCENE - Spider-Man vs. Doc Ock water fight
After Spider-Man hits Doc Ock and MJ almost falls down in the nuclear fusion ball (pic1), Spider-Man shoots his webs into the air (pic2) so he can jump away to save her from falling in the fusion ball. (pic3 is a better pic, but smaller). This small part is wisely deleted from the final cut, since this removes the tension whether Spider-Man will save MJ in time.

DELETED SCENE - Ursula
There’s another scene between Peter Parker and Ursula which happened at the end of the movie, but it was deleted.

DELETED SCENE - Harry and the Globin's mask
The most interesting deleted scene of Spider-Man 2. After Harry stumbles into his father's Goblin's mask, he takes it and faces it, looking straight into the mask. Will he follow his father's path..?

pic
DELETED SCENE - Harry's green tie
At MJ's wedding, Harry wears a green tie, possible foreshadowing the return of Harry the Goblin (Goblin 2 indeed). Originally, and shown in a trailer, Harry wears a black tie. The color is slightly colored digitally green in post-production. A possible hint for a new villain for the third movie...?
Personal note: the difference of color is hard to spot, but they definitely are not the same.
